    Hi guys. You seem to be doing everything right, so my guess is that you have done this, too, but just in case you have not: have you approached Terroirs d’Avenir about your beef? They are based in Paris and have a retail store, but mostly supply trendy restaurants in town. They are very careful about local sourcing, sustainability, all that. What you do is just what they are looking for, seems to me.
